3 pounds chicken, cut up

Salt

Freshly ground pepper

6 tablespoons butter

2 tablespoons vegetable oil

¼ cup applejack or good Calvados

½ cup chicken stock, fresh or canned

2 tablespoons finely chopped shallots

¼ cup finely chopped celery

2 small tart apples, peeled, cored, and coarsely chopped

½ teaspoon thyme

2 egg yolks, or 3 if the yolks are small

½ cup heavy cream

½ teaspoon lemon juice

Cayenne

2 tablespoons finely chopped parsley for garnish

Watercress for garnish
